The perfect Spring side dish. Warm Blue Cheese over Brussels Sprouts and Bartlett Pears.
I love spring! Especially since we have been living in a freezing cold ice box for the last 7 months. No more hearty stews and heavy meals. It’s finally time for seasonal fruits and fresh veggies. Disclaimer: this recipe might not be for everyone (picky eaters) but it sure is a wonderful way to amp up your green intake. I understand not everyone enjoys Brussels sprouts, and there’s even those people who don’t like Blue Cheese. Which begs the question, how can you not like blue cheese!? All judgments aside, putting these three items together might sound risky, and you might get some weird stares, but trust me– it’s amazing! I make this dish because it’s quick, easy, and healthy. Because of its versatility, you can serve it as a side dish or make it the main course. It’s so simple, and literally takes minutes. Chop, chop, cook, heat, and eat!
When I am watching what I eat, this is frequent go-to meal of mine. On Monday nights, Hailey and I get together to try new recipes, workouts, etc. Recently, Hailey and I made this, and she absolutely loved it. She just moved into her new house so it was the perfect way to break in her new kitchen. We decided to play with the recipe and eat it over a bed of spinach. Go ahead and play with this recipe by adding in other ingredients like sliced almonds, asparagus, lemon, etc.
Prep Time: 3 minutes
Cook Time: 5 minutes
1lb of Brussels Sprouts.
1 Container of Blue Cheese crumbles
1 Bartlett Pear
1/4 cup of Sliced Almonds
1 tbsp. of Olive Oil
Step One: Halve Brussels Sprouts, set aside. Slice pear into small pieces.
Step Two: With stove on medium heat, fill pan with olive oil. Add halved Brussels Sprouts.
Step Three: Once Brussels Sprouts start to brown, add sliced pear and almonds. Stir as needed until chopped pear is soft.
Step Four: Remove from heat, and pour desired amount of Blue Cheese Crumbles.
